As promised last week, here is the Three-Flavored Fish from Amarin Thai Cuisine in Hillcrest, which was requested by a reader. As you can see from the list of ingredients, preparing this dish is going to require a trip to an Asian market such as 99 Ranch (7330 Clairemont Mesa Blvd., Kearny Mesa).
Three-Flavored Fish

FISH
2 (8-ounce) boneless, skinless sole fillets
1/2 cup fish 'n' chips batter, such as McCormick Fish 'n Chips Seafood Batter Mix, prepared according to package directions
4 cups canola oil
SAUCE
1/2 cup canola oil
1 teaspoon chopped cilantro
1 teaspoon minced garlic
2 teaspoons minced pickled garlic
6 whole dried Thai chiles
1 red bell pepper, cut into bite-size pieces
1 cup pineapple chunks
4 tablespoons palm sugar
2 tablespoons fish sauce
1/4 cup vinegar
1/4 cup tamarind sauce
1/2 teaspoon salt
2 to 3 lime leaves, finely chopped
For the fish: Heat oil in a deep pan to 375 degrees. Generously coat both sides of the fish fillets with prepared fish 'n' chips batter. Deep-fry the fish until it is cooked through and golden brown. Set aside.
To make the sauce: Heat oil in a saute pan. Stir-fry cilantro and garlic until garlic begins to brown. Add the pickled garlic, Thai chiles, red bell pepper and pineapple chunks. Season with palm sugar, fish sauce, vinegar, tamarind sauce and salt. Simmer until sauce is slightly thickened but not as thick as gravy. Pour the sauce over the fish and sprinkle with finely chopped lime leaves.
